Hamantashen Cookies! Today is Purim, the feast day that began in the book of Esther. Hamantashen (Haman's hats) 4 cups all-purpose flour 1/2 salt 1 cup sugar 2tsp baking powder 3 eggs 1tsp vanilla 1/3 cup butter 1/3 cup orange juice flour for rolling dough any of your favorite jelly Directions #1 Preheat oven to 350 degrees. #2 Sift flour, salt, and baking powder. #3 Cream butter and sugar. #4 Slowly add vanilla, eggs, and OJ to butter and sugar mixture. Add dry ingredients. #5 Knead dough until smooth. #6 Roll out dough with rolling pin on floured surface until 1/4" thick. #7 Using round cookie cutters make circles of dough(we use a glass) #8 This is the hardest part and hard for me to describe a diagram is better but I can't do that online. So here goes: with your circle of dough put a small amount of jelly in the middle, then fold in three sides to make a tri-cornered hat and pinch the corners tightly. I guess that wasn't too hard---as long as you understand! #9 Bake for about 20 min. or until lightly brown. Makes about 3 dozen cookies.
