Hummingbird Cake
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
1 teaspoon ground cinnamon
3 eggs beaten
3/4 cup vegetable oil
1 1/2 teaspoon vanilla extract
1 ( z) can crushed pineapple undrained
1 cup chopped pecans
1 3/4 cups mashed bananas
mix first 5 ingredients (no mixer) stir in vanilla, pineapple,pecans and bananas mix by hand and pour into greased and floured pan. Bake at 350 until done ( oven temperatures vary)
Cream cheese Frosting 1/2 cup butter
1 (8 oz) cream cheese softened
1 (16 ounce) package powdered sugar, sifted
1 teaspoon vanilla extract mix until well blended with mixer
frost cooled cake and sprinkle frosting whith coarsely chopped pecans.
