Zucchini Relish Recipe! Hi Everyone! Mom and I just finished making this zucchini relish. If you have extra zucchini you might want to give this recipe a try! Zucchini Relish 8 c. zucchini, grated 1 1/3 c. onion, chopped 1 1/3 c. sweet peppers, chopped (We used red and green sweet peppers.) 1/3 T. hot pepper (We left this out.) 3 1/3 T. salt Mix the above ingredients together and cover with cold water. Let stand for 10 hours (You can actually let this stand for a couple hours and it's just as good!) Rinse and drain off excess liquid before taking the next step of this recipe. Juice: 1 1/2 c. vinegar 3 1/3 c. sugar 1/3 c. clear jell 2/3 t. turmeric (We left it out too.) 1 t. celery seed 2 t. dry mustard 1/3 t. black pepper In a 12-quart kettle, bring juice to a boin then add the zucchini mixture and boil 15 minutes longer. Put in sterilized jars and seal immediately. Waterbath for 15 minutes. Yield: 8 half pints We found this recipe in Harvest of the Garden Home Canning & Freezing Recipes
